What are microgreens?
Microgreens are very young vegetables. They are further developed than sprouts, as they have leaves. At gone green, we are always trying new vegetables, but our favourites are sunflowers (these have a delicious nutty flavour), pea sprouts and radishes (these have beautiful colour).
Why eat them?
Well firstly, they are delicious! But even better, they are very nutritious. Researches have found that microgreens have a higher nutritional density than their fully grown counterpart.
Each microgreen has it’s own nutrient profile, but most are high in antioxidents, potassium, iron, zinc, copper and magnesium.
How can I use microgreens?
You can easily boost the nutritional content and add colour, flavour and texture to your meals by adding microgreens. Try these options:
Use as a replacement for lettuce in sandwiches, wraps or tacos
Add to your juices and smoothies
Toss them into your salads
Great in omelets or as a garnish for eggs with breakfast
How do I store them?
Microgreens are best kept refrigerated at 4 degrees and eaten within 10 days. Like all plants, wash before use and follow the use by date.
